Omlette Pancakes

Healthy eating is something that most of us at several points during the year will talk about starting, especially at the start of the year after the excesses of Christmas and New Year start to take their toll.

Inevitably we will find excuses for the expense, the time it takes to prepare food or it’s just boring and not as tasty as the foods we should be avoiding.

To start you off we thought we would let you know about the delicious Omelette pancakes with tomato & pepper sauce recipe we found.

At under 300 calories per serving and a total prep and cook time at under half an hour this is a great option for something a little bit different to excite your taste buds.

First of all here is what you will need;

  • 4 Large Eggs
  • 1 Handfull of Basil Leaves
  • 2 Tablespoons of Rapeseed Oil
  • 1 Yellow Pepper
  • 2 Garlic Cloves
  • 1 Tablespoon of Cider Vinegar
  • 1 400g Can of Chopped Tomatoes
  • Salad Leaves

To make the sauce you first need to heat the oil in a pan while frying the pepper and garlic for around 5 minutes to soften them before adding the cider vinegar. You can then add your whole tin of tomatoes as well as a third of the can of water before covering and simmering until the sauce is thick. This will usually take around 10-15 minutes.

To make your pancakes simply beat an egg with a touch of seasoning and a tablespoon of water while heating a small amount of oil in a frying pan. Cook for one to two minutes until your pancake is ready.

You can then spoon on your sauce over your pancakes and put the basil leaves across it. It can be served with bread or a light salad.
